This week, we connected with Stephen Wancha, General Manager of the iconic Four Seasons Hotel Chicago. With a career that has taken him from Las Vegas to Toronto and now back to the Windy City, Stephen brings a global perspective and a passion for thoughtful, detail-oriented service that has come to define the Four Seasons name. From his start in food and beverage to becoming the youngest Director of F&B at just 28, Stephen has shaped guest experiences at some of the brand’s most celebrated properties.
Now at the helm in Chicago, he’s leading the charge through one of the hotel’s most exciting transformations yet—overseeing a multi-million dollar renovation that reimagines everything from the lobby to the culinary scene. If you’re planning a trip to the Midwest this year, Four Seasons Hotel Chicago should be at the top of your list.

1. What makes Chicago special to you, and how would you describe the cities’ unique energy?
I fell in love with Chicago because of the people—they’re the true strength and charm of this city. Midwestern hospitality is very real here: people are friendly, welcoming, and deeply passionate about all things Chicago. It’s hard not to love a place where residents take such genuine pride in every aspect of their community. When I first moved here in 2016, I had dozens of colleagues—on day one—telling me all about their neighborhoods and why I should move there. Fast forward nine years, and now I find myself doing the exact same thing with new Four Seasons teammates just arriving in the city!
2. If someone only had 24 hours in Chicago, what are the must-do experiences?

Twenty-four hours in Chicago is never enough—but if that’s all the time you have, here’s how I’d make the most of it:
I’d start the morning with a coffee in hand and a walk along the Lakefront Trail, which offers some of the best views of our iconic skyline. From there, I’d hop on an architectural boat tour to learn about the city’s legendary buildings and rich history. In the afternoon, I’d make a stop at the Art Institute of Chicago—home to the largest collection of Impressionist art outside of the Louvre. For dinner, there’s no better place for beef than one of Chicago’s classic steakhouses. To end the night, I’d head to the Green Mill Jazz Club, a historic gem that’s been around since 1907 and once served as a favorite hangout for Al Capone himself.
3. What are some Chicago hidden gems—restaurants, shops, or activities—that even frequent visitors might not know about?
Chicago is a city of neighborhoods, each with its own character and charm. I always recommend that visitors do a bit of research before they arrive—it’s the best way to appreciate what each pocket of the city proudly brings to the table.
As a passionate foodie, I love sharing a few local gems: Margie’s Candies has been serving up amazing ice cream sundaes and sweet treats since 1921. Manny’s Deli has been around for over 80 years, and their corned beef rivals anything you’d find in New York. And in Old Town, Twin Anchors—a classic BBQ spot with over 80 years of history—is worth a visit for their signature zesty sauce alone.
4. Chicago has an incredible food scene. Beyond the FS Chicago and Adorn, where do you personally love to dine? And how about at the Hotel too? Do you have a favorite Adorn or In-Room Dining dish?

This is one of the best parts of living in Chicago! With 19 Michelin-starred restaurants and 47 Bib Gourmand recipients, the city offers incredible culinary diversity across all price points. It’s tough to narrow down favorites, but a few standouts for me include the traditional Neapolitan-style pizza at Spacca Napoli, the silky tehina hummus, warm pita, and smoked turkey shawarma at Galit, the spicy vodka rigatoni at Ciccio Mio, and the black truffle roasted chicken at Boka—a true classic.
I’m also incredibly proud of our own culinary and food & beverage team at Four Seasons Hotel Chicago. We use the highest quality ingredients and serve thoughtful, delicious dishes in both Adorn Bar & Restaurant and through In-Room Dining.
My personal favorite? Our Duck Inn Dog—a true taste of Chicago. This elevated take on the city’s iconic hot dog gained fame thanks to our former Executive Chef Kevin Hickey, a James Beard Foundation-recognized talent who now owns Duck Inn in Bridgeport. The dog itself is a juicy blend of pork, beef, and duck fat, topped with all the Chicago staples: relish, tomato, mustard, onion, celery salt, and pickles. It’s a bite of local flavor we’re proud to share.
5. What’s one local tradition or cultural experience that every visitor should take part in?

First, take an architectural boat tour—it’s one of the most unique and fascinating ways to see the city and learn about its rich history.
Second, visit our most iconic piece of public art: Cloud Gate, affectionately known as “The Bean.” It’s a true Chicago landmark and a favorite photo spot in Millennium Park.
And third, catch a baseball game at Wrigley Field, home of the Chicago Cubs. The energy, history, and neighborhood charm make it an unforgettable Chicago experience.
6. What’s your favorite time of year in Chicago, and why? Any seasonal events or festivals travelers should plan around?
Summertime in Chicago is a vibe. The city truly comes alive, and you’ll find everyone soaking up the season—from weekly festivals to pop-up patio dining on every corner.
There are a few signature summer events I always recommend to travelers:
- The Chicago Air & Water Show – the largest free show of its kind in the country, and an absolute must-see along the lakefront.
- Lollapalooza – a world-famous music festival that draws over 100,000 people each year to Grant Park.
- Windy City Smokeout – a lively BBQ festival featuring top country music acts and some of the best ribs, brisket, and pulled pork you’ll ever try.
Chicago knows how to do summer right.
7. What’s the best way to explore—on foot, by bike, by boat, or another way?
All of the above! Chicago has great public transportation, easily accessible for locals and tourists alike. However, we also have an abundance of bike paths and pedestrian accessible walkways. For guests of our hotel, I suggest our yacht in the summer. We have a private yacht experience, May through September, where guests can experience Chicago from the water like no other. With customizable tour guide, food & beverage, and spa options, it’s a best-in-class experience.
8. What’s the one must-do experience at FS Chicago?
A visit to our recently renovated Spa to enjoy our black diamond facial. It includes a unique facial peel enriched with fine diamond particles to provide a truly unique treatment. I would then sit poolside and enjoy a bite to eat from our plant-based menu, accompanied by a fresh fruit smoothie. Fun fact: our iconic pool was featured in Home Alone 2!
