Xcaret’s gastronomic prowess has reached new heights as Ha’ Restaurant, a signature dining experience led by chefs Carlos Gaytán and Cristian Castillo Sánchez, proudly receives its first Michelin Star. This honor not only positions *Ha’* as a standout destination in Xcaret but also marks a milestone for Mexican gastronomy, cementing it as the first restaurant within the Xcaret family to achieve such a prestigious accolade. With this recognition, *Ha’* joins the ranks of world-renowned establishments, showcasing the refined artistry and cultural richness of Mexico’s culinary heritage.

Set against the lush backdrop of Hotel Xcaret Mexico, Ha’ offers an intimate, cosmopolitan atmosphere where guests are treated to an immersive nine-course tasting menu. Inspired by the Maya word for water, the restaurant is named to reflect its focus on purity and fluidity, embodying a dining experience where each dish tells a story rooted in the traditions of Mexican cuisine. With carefully sourced ingredients and techniques that combine modern innovation with deep respect for heritage, every course presents a stunning blend of flavors, textures, and aromas. The meal is further elevated by a selection of predominantly Mexican wines, meticulously curated to complement each unique dish.

This accolade is a crowning achievement for Chef Carlos Gaytán, who made history as the first Mexican chef to be awarded a Michelin Star both domestically and internationally. His latest achievement at Ha’ comes shortly after the debut of his three Mexican dining concepts at Downtown Disney in Anaheim, California, which also received widespread acclaim. In his own words, Chef Gaytán shared, “This award is a testament to over seven years of dedication and collaboration with our local suppliers and collaborators. It celebrates our passion for each ingredient, prioritizing quality and sustainability, fundamental values that characterize Grupo Xcaret.”

Beyond Ha’ Restaurant, the Michelin Guide’s spotlight on Mexico this year extends to other culinary innovators within Xcaret’s Gastronomic Collective, such as the Rivera Río brothers of *Lumbre* and *Centli* at La Casa de la Playa, and Jonathan Gómez Luna of *Chino Poblano* at Hotel Xcaret Arte. Their inclusion in this year’s Michelin recognition reflects Xcaret’s role as a burgeoning epicenter of haute Mexican cuisine. Each of these chefs contributes to the collective’s ethos of delivering world-class dining experiences while maintaining a strong commitment to sustainability and local community support.

The Riviera Maya’s dining landscape has been steadily gaining recognition, but the announcement of the Michelin Guide’s inaugural visit to Mexico in early 2023 marked a historic shift for the region. The anticipation culminated in the 2024 ceremony held at Mexico City’s iconic cultural venue, El Cantoral, where the prestigious Michelin Stars were awarded on Mexican soil for the first time. The event signaled a new chapter in Mexico’s culinary story, one that champions the extraordinary talent and dedication of its chefs.
