A Zesty Passionfruit Mojito Recipe from St. Kitts

On a recent trip to St. Kitts, we enjoyed lots of rum cocktails, but one that kept popping up was the Passionfruit Mojito. It is refreshing, zesty, and tangy, perfect for a day at the beach or a backyard picnic. Try this easy to make recipe right at home, just in time for Memorial Day Weekend!

Passionfruit Mojito Recipe

A Zesty Passionfruit Mojito Recipe from St. Kitts

Ingredients:

2 ounces white rum
1 ounce fresh lime juice
1 ounce simple syrup (or more, to taste)
6-8 fresh mint leaves
2 passionfruit (ripe)
Club soda or sparkling water
Ice cubes
Mint sprigs and lime wedges for garnish

Instructions:

1) Cut the passionfruit in half and scoop out the pulp into a glass or cocktail shaker.
2) Add the mint leaves and muddle them gently with the passionfruit pulp to release their flavors.
3) Add the white rum, fresh lime juice, and simple syrup to the glass or shaker.
4) Fill the glass or shaker with ice cubes and give it a good shake to mix all the ingredients together. If using a glass, use a muddler or the back of a spoon to muddle the ingredients together.
5) Fill a tall glass with ice cubes and strain the mixture into the glass.
6) Top off the glass with club soda or sparkling water, leaving some room for garnishes.
7) Stir gently to combine all the ingredients.
8)Garnish with a sprig of mint and a lime wedge.
9) Serve your passionfruit mojito and enjoy!

Note: If you prefer a sweeter mojito, you can adjust the amount of simple syrup to your taste. You can also add extra passionfruit pulp for a stronger passionfruit flavor.
